Cooking Acar
I find it kinda hard to explain what is Acar. It seems like a vegetarian meal, which should be considered as healthy. But, with the presence of chilli and groundnuts, can it still be considered healthy?
These 2 weeks, my mum has been cooking it every week, for her colleagues, friends and son. Of course, I didn't eat, but just interested to snap some photos of how it's prepared.
The ingredients include the stated: cabbage, lemon juice, pineapple, carrot, long bean, white turnip (mengkuang, 沙葛) and cucumber.
Don't forget the chilli, which is the main cast of this show. Preparing this chilli is not easy and takes the most time, compared to the meal itself.
Squeeze some juices from lemons.
Cut a few slices of raw chilli.
This is the brand used by my mum.
When the water (with the mixture of salt, sugar and artificial vinegar) is boiled, start cooking the prepared ingredients.
My mum cooked the cabbages first, then pineapples.
The "position arrangement" for carrots and long beans was not intentionally made. It just happened to be so :)
Tempted to taste one or two?
Okay, throw away the boiled water and have your kuali dried. We are gonna start the frying process.
Add in the veges one by one... and stir it from time to time.
Later, add in the lemon juice. If it is too spicy or sour, you can add in more sugar.
Turn off the gas and the Acar is ready to be served!
Any order from you?
You could have some sesame and groundnuts served together. It would smell very nice, but remember, groundnuts are very fattening!!
